Happy Valentine's Month!
While most girls prefer chocolate and flowers on Valentine's day, I tend to enjoy sushi and shoes and the possibility of celebrating for the whole month. (My husband isn't impressed with this notion.)
Shoes and sushi aside, you also need a little sweet on Valentine's Day! So today I'm sharing with you a super simple, super versatile, chia seed pudding that is practically guilt free. Which means I can have that extra serving of yam tempura, right? (YES!)
Chia seeds, vanilla almond milk, and fresh berries. Perfect as breakfast, dessert or just a snack in the middle of the day. What's not too love?
VANILLA CHIA SEED PUDDING Ingredients:
1/3 cup Chia seeds
1 1/2 cups Vanilla almond milk
1-2 Tbsp Honey
Splash of vanilla
Fresh berries
Method:
In medium bowl combine chia seeds and almond milk. Store in refrigerator for 30 minutes. Stir and place back in refrigerator for at least four hours, or overnight, covered. Add in vanilla and honey to taste. Top with fresh berries. Serves 2.
