MONSTER RICE KRISPIE TREATS

Give me a theme or holiday, and chances are I can come up with a rice krispie treat that fits the bill. What can I say? It’s a gift.

The kids are under the impression I do this solely for them (I may have falsely led them to this conclusion,) in reality I make them for me. Yes, me, the slightly older ‘kid,” a kidult if you will.

With fall in full force and Halloween on the horizon, my thoughts turn to spooky treats and delicious eats….so I give you, monster rice kristpie treats!

Ridiculously delicious and cute if I might add, but most importantly treat-or-treat/school friendly.

INGREDIENTS:

  • 1/4 cup butter

  • 5 cups of miniature or 40 large marshmallows

  • 1/2 teaspoon vanilla extract

  • 6 cups rice krispies cereal

  • Candy melts in assorted colours

  • Candied eyes

DIRECTIONS:

  1. In large saucepan over low heat, melt margarine. Add marshmallows. Stir until melted and well blended. Remove from heat.

  2. Stir in vanilla. Add cereal, stirring until coated.

  3. Using lightly butter spatula, press into buttered 13 x 9-inch pan. Cool. Cut into bars.

  4. Melt vanilla candy melts in microwave according to package directions.

  5. Dip each cut bar into melted candy melts and top with eyes. Allow to re-harden before enjoying.
